Question for anyone who works at panera?

the bags say that your bread is baked fresh every morning, but i am wondering how it is shipped. do you receive plain ingredients like flour, sugar, yeast, etc? do you get some kind of 'just add water' pre-mix? do you get frozen chunks of dough to just thaw and toss in an oven?
